Mark Ahessy, head chef at The Old Spot has a well-honed career that has brought him from the gastronomic honeypot of Kenmare to top Michelin kitchens to barrel cooking over live fire in a remote ranch in Nevada. When he’s not in the kitchen, you’ll find Mark in his music studio, producing psychedelic trance under his moniker of Meerkat, or DJing at an international dance festival.
